The menu will combine their different cooking styles and influences over multiple courses – the chefs will alternate between omakase-inspired dishes and classic European fine dining. Guests will be welcomed with a sushi course at the Trivet bar, before moving into the restaurant for the rest of the dishes. While the menu is under wraps until the night, we do know that sea bass tempura with French mushrooms; squab pigeon roasted over charcoal with spiced carrots and kale; and Jonagold apple with tahitensis vanilla cream will be served.
