Last autumn, it opened a hotel on British soil: the handsomely redone Cowley Manor. Alongside 36 stylish bedrooms, this 17th-century pile in the Cotswolds now has a restaurant headed up by Jackson Boxer, whose simple ingredients and not-so-simple inventiveness have created a menu worth travelling for. As part of his SLMan takeover, Jackson showed us round the place – from the pool to the plate – then sat down to tell us why taking over a hotel has been such a rewarding experience.
