Perhaps the unfortunate people who have a dairy intolerance or those on a very strict diet. My love for butter-based cooking and butter in general will probably get me a visit to the cardiologist sooner rather than later, but hey, you live only once. Even though Irish or French butter is considered by most experts to be the best in the world, my personal preference is a white Italian Alpine butter, and I never deprive myself of it at home or at the restaurant. At [Ornella](https://www.ornella.restaurant/), we use plenty of it in our signature burro e parmigiano to create a silky, cheesy sauce combined with homemade tagliatelle. It’s the ultimate comfort dish. **Fermented pastes & other condiments**: I have a penchant for fermented pastes and other condiments. Thai green curry paste, doubanjiang (a Chinese chilli bean paste), Mexican mole, miso, ssamjang, mustard, harissa, crispy chilli oil… you name it, I’ve probably bought it at some stage. To my partner’s deep disappointment, a whole shelf in my fridge is occupied by all of these products at all times. Trying to achieve something that creates deep umami flavour without these products is always a bit of a challenge for me, and life often feels boring without them. They also help to diversify my diet and keep my cooking healthy, but my wallet suffers when I find a shop that sells any of these products. The more unknown it is, the more excited it gets me. ## FRUIT & VEG **French sweet onions:** There are very few things I enjoy as much as good caramelised onion for the base of any cooking. Controversially as an Italian, I prefer the French varieties, especially Roscoff. They are just perfect – never too harsh, never too powerful, always superb. A wise man told me long ago that you build flavour as you go, and often it all starts from a well-cooked onion. This is a common theme in my favourite dishes and cuisines: from the queen of all onion dishes, the French onion soup, to the delight of the crispy caramelised onions you get on top of your rice-based pilaus or biryanis. A good onion is integral to a great stock or curry too. We have a brodo dish at Ornella, with fresh tagliolini in a Roscoff onion broth served with cheese toast on the side. Despite the crazy heatwaves over the summer, it’s been one of our bestselling dishes since opening. **Thai/Indian chillies:** Life always needs a bit of spice and, being half Bengali, usually for me it’s not spicy enough. I always have fresh chillies at home for flavour and aroma, but a dry chilli also never disappoints. A scotch bonnet or a carolina reaper is a step too far on the Scoville scale for me, but a good jalapeño or any other more manageable variety is always a joy to have around. One of my dreams is to become a chilli connoisseur and understand every different variety. Every time I see a bit of cheap table salt, a part of my heart breaks. Hopefully I won't see much more in my lifetime. Jokes aside, grey salt is great not just for taste, but because it has a lower impact on the environment due to the natural extraction practices. [**Diaspora Co spices**](https://www.diasporaco.com/)**:** Being South Asian, I’ve had spices as a staple since day one, and I can't praise enough the quality of the spices you get from Diaspora Co. I have rarely come across something as special as their coriander seeds and saffron, but the whole range is insane. It’s also extremely sustainable. They have great practices when it comes to showcasing and paying their producers, which sadly isn't often the case when it comes to the spice trade. ## SNACKS [**Bombay mix**](https://www.howdahsnacks.co.uk/products/bombay-mix)**:** Bombay mix just reminds me of home, and sometimes that's all you need. It’s even better mashed up with some finely diced onion, cherry tomatoes, chilli, coriander and a big squeeze of lime. [**San Carlo Grill crisps**](https://www.delicatezza.co.uk/products/san-carlo-classic-crisps-50g-delicatezza)**:** San Carlo is by far my favourite brand of crisps, and its Grill range is the perfect choice for me. In Italy, they are marketed to go inside sandwiches, but I think the best way to have them is with a bit of thinly sliced coppa, a couple of high-quality olives and a glass of Aperol spritz. Enjoyed with a wonderful view or a lovely sunset is the only way it can be topped. I'm still trying to work out which one of [S.Pellegrino](https://www.awin1.com/cread.php?awinmid=3574&awinaffid=69421&platform=dl&ued=https%3A%2F%2Fwww.drinksupermarket.com%2Fsan-pellegrino-sparkling-mineral-water-24x-500ml-glass-bottle%3F) and [Perrier](https://link.amazon/B0cBDUMWu) I prefer. It all comes down to a few details and they both score closely. Basically, it needs to be a glass bottle – anything that comes in a glass bottle gets colder, stays fresher and makes me feel a bit fancier. **Probiotic soda**: I'm sure it's not actually that healthy, but I try to be mindful of what I drink and it's better than drinking Coke Zero, I hope. **Coke Zero:** When probiotic soda just doesn't hit… which is most of the time. ## FREEZER [**Happy Endings**](https://www.happyendingsldn.com/): Specifically, the [Gay One ice-cream sandwiches](https://www.happyendingsldn.com/sandos/gay-one). The older I get, the less I indulge in sweet things. However, the Gay One is just a masterpiece of a dessert.
