The Alfriston

South Downs

The Signet Collection – the group behind The Mitre and The Retreat at Elcot – opens its fourth hotel on 27th March. In the quaint village of Alfriston within South Downs National Park, the hotel will have 38 individually designed bedrooms, complete with playful colours, upcycled antiques and modern bathrooms. Guests can dine at the 70-seat 1554 Brasserie, offering local produce and stunning views, or enjoy casual dining in the bar and Orangery. There will also be an outdoor pool, as well as a spa with a steam room, sauna and treatment rooms.

Fowlescombe Farm

Devon

Fowlescombe Farm is the next rural escape set to make an appearance on your Instagram feeds. The hotel is set on a regenerative, organic farm in the foothills of Dartmoor, where sustainability plays a central role. It’s launching with eight suites, spread across repurposed Victorian farm buildings that feature natural materials like stone from the farm’s own quarries. Most have views of Dartmoor’s meadows and woodlands. Guests will be able to enjoy hyper-seasonal farm-to-table dining in the Refectory, with meat and produce from the estate’s own farm. And during a stay, you’ll be able to try everything from breadmaking and foraging to foraging and fishing at the nearby lake.

The Swan Inn

West Sussex

The Swan Inn in Fittleworth, West Sussex, has reopened after a careful restoration. Right on the doorstep of the picturesque South Downs National Park, this historic 14th-century coaching inn now has 12 en-suite bedrooms, including family- and dog-friendly options, along with a cosy pub serving local beers, artisan ciders and English sparkling wine. The 46-cover dining room is a lovely spot for Sunday lunch or a relaxed evening with friends, offering dishes like venison lasagna, slow-cooked harissa lamb shoulder and tarte tatin. Rooms are cosy, with country, boutique interiors, antique furniture and uber-comfy beds. Guests can help themselves to homemade cake and drinks at the honesty bar, and enjoy generous breakfasts in the chic outbuilding next door (also available for hire). Keep your eyes peeled for the expansive pub garden which is set to open later in the year.

The Manor House Inn

This is the seventh pub with rooms that hospitality pros Chickpea Group have restored in recent years. The Manor House Inn in Ditcheat, near Bruton, recently opened its doors after an extensive renovation that maintains original features like exposed beams and flagstone floors. The charming 17th-century pub now has nine rooms and a welcoming menu of pub classics. The main bar has plenty of cosy seating, an open fire and a dedicated pizza kitchen. The bedrooms, above the pub and in the courtyard, are home to king-size beds, Moroccan rugs and chic en-suite bathrooms. Best of all, rooms start from just £100 a night.

Dakota Hotel

Newcastle

Boutique hotel group Dakota is expanding into Newcastle with a property opening on the city’s Quayside in April. The hotel will feature 118 bedrooms, including the city’s most luxurious suite – the Grand Deluxe – which spans 130 sq m and includes butler service, a roll-top bath and views of the Tyne. Guests can enjoy elevated British classics at The Grill, sip cocktails at the sleek Dakota Bar, or relax on the waterfront terrace. There will also be a champagne room, cigar terrace and numerous communal spaces.

One of the most exciting openings in recent months was Saltmoore, a stunning property near the North Yorkshire Moors. The property has just added 29 luxurious bedrooms to its Beach House. Just steps away from Saltmoore House, guests can enjoy serene coastal interiors designed by Sapin Studio, inspired by the surrounding woodlands and sea. The Beach House offers laidback luxury with rooms featuring balconies or private outdoor baths, while the Saltwick and Sandsend Suites have freestanding tubs and lounge areas. Guests can also enjoy the state-of-the-art spa, home to an indoor heated pool, jacuzzi, sauna, steam room, relaxation room, and numerous treatment rooms.

This boutique hotel is taking over a restored Grade II-listed 17th-century manor house in Chipping Campden. Set to open in the spring, the hotel is putting R&R to the fore, encouraging guests to slow down and unwind. Set within a 60-acre estate, the property has thoughtfully designed interiors by Youth Studio and Jolie Studio, who have blended contemporary colours and textures. Naturalmat beds, Verden toiletries and Dyson hair dryers complete the luxe offering. There will also be a restaurant serving British dishes made with locally sourced ingredients, as well as a barn-style events space for weddings and private events (due to open next year).

Tiptoe Retreat

Northumberland

The recently opened Tiptoe Retreat in Northumberland is home to two luxury, sustainably-made tree cabins – Howlet and Brock – surrounded by 600 acres of organic, regeneratively farmed land. Perfect for a restorative weekend, the dog-friendly cabins have beautiful views of the River Till valley and Cheviot Hills. Both cabins sleep two and feature super king beds, compact kitchens, wood-burning stoves and outdoor copper baths. Howlet has a living roof, while Brock has a rope hammock and skylight for stargazing. Sustainability is key, with solar panels, local timber and farm-to-door breakfast hampers. Guests can enjoy activities like Pilates, cookery workshops or guided fishing, and explore nearby Northumberland National Park.

Treehouse Hotel

Manchester

Treehouse Hotel is expanding its portfolio with a second site in Manchester. Opening on 19th March, the hotel will bring a playful experience to the city’s hospitality scene. With 224 guest rooms, including nine suites, the hotel blends whimsical forest-inspired interiors with Treehouse’s signature ‘perfectly imperfect’ design ethos. The ground-floor restaurant, Pip by chef Mary-Ellen McTague, will adopt a low-waste cooking approach with seasonal ingredients, while the 14th-floor destination restaurant, Sister Moon by Sam Grainger, and signature bar The Nest in Treehouse, offer elevated dining with panoramic city views. There’s also a gym, screening room and numerous event spaces.

The Bat & Ball

Oxfordshire

The Bat and Ball, a new addition to Oxfordshire's pub scene, opened its doors in January, in the pretty village of Cuddesdon. Owned by Ben Moss and part of the Montgomery Group, the country pub has a lively, fun atmosphere, offering an elevated menu of pub classics designed by chef Rick Owens (ex-Le Manoir) – count on sausages and mash, bacon, egg and chips, and sticky toffee pudding. You'll also find five boutique rooms upstairs with bold Farrow & Ball colours, Fairfax upholstery, and additional sofa beds in the suites. It’s the perfect spot for a Sunday lunch in the Cotswolds.

The Feathers Hotel

West Oxfordshire

The Feathers in Woodstock recently reopened following a multi-million-pound renovation. It has some of the best interiors on this list, featuring contemporary fabrics, furniture and textures alongside restored original features like beams and old fireplaces. Highlights include The Nest brasserie, which serves seasonal British dishes, and The Aviary Bar, offering creative cocktails made with local ingredients. Each of the 23 rooms and suites has been thoughtfully redesigned with natural tones inspired by the Cotswolds' landscape. Just moments from Blenheim Palace, it’s a perfect base for exploring the local area, with plenty of independent restaurants and boutiques nearby.

Hambledon Wine Estate

Hampshire

If you’re after a lovely day out at one of England’s finest wineries, Hambledon Wine Estate should be at the top of your list. Now there’s even more reason to visit: it has opened a 40-cover restaurant and bar. Headed up by chefs James Osborn and Nick Edgar, the menu showcases local Hampshire produce. Lunch or dinner could include dishes like chalk stream trout with beetroot and horseradish, braised beef cheeks with pomme purée, and pistachio soufflé with clementine sorbet and dark chocolate sauce. The estate’s wines can be enjoyed with meals or in its slick tasting room – the estate is under the stewardship of Berry Bros. & Rudd and Symington Family Estates, so there’s an extensive selection on offer.

Edinburgh

Chic Stockbridge is home to some of our favourite restaurants in Edinburgh – see our city guide here. The latest opening is Moss, a 26-cover farm-to-table restaurant from chef Henry Dobson. The space has been designed by his wife Akiko, featuring homemade paint and hand-crafted tables made using materials from their Scottish family farm. The menu features ingredients sourced only from the ‘Scottish larder’, with dishes like duck smoked with wood shavings, smoked pigeon with chipotle miso, and fluffy, Japanese-inspired chiffon cake. Accompanying this is a selection of British spirits, beers and low-intervention wines.

Kynd

West Midlands

For a foodie weekend, Hampton Manor hotel near Birmingham has it all: a Michelin-starred low-waste restaurant, a bakery – and now a casual spot, Kynd, headed up by the hotel’s award-winning chef David Taylor. Much like David’s acclaimed restaurant Grace & Savour, this spot will showcase seasonal produce from the estate's grounds, but at a more affordable price point. The menu here also embraces low-waste, farm-to-table dining, with wood-fired dishes like flat iron steak with black garlic butter and line-caught gurnard with lobster bisque. The warm, rustic interiors and relaxed vibe are complemented by a thoughtful wine list, featuring low-intervention wines and sustainable beers.

Pinch Café

Suffolk

Pinch, the bakery by chef Alice Norman, has evolved into a café now open in a larger space on Suffolk's Maple Farm. With indoor and outdoor seating, Pinch 2.0 has a new menu of Roman-style pizzas, slushies, cocktails and more. Guests can enjoy pizzas with toppings like potato and rosemary, alongside bakery favourites like crullers, homemade gelato and seasonal pastries. Visitors will also find a selection of food from local and small food suppliers, like Fenn Farm Dairy, Pump Street Chocolate, Climpson & Sons and St. Jude Cheese.

Sebb's

Glasgow

Scottish restaurant group Scoop (behind Ka Pao and Ox & Finch) recently opened Sebb’s, an underground bar and restaurant on Glasgow’s Miller Street. Guests can choose from dishes cooked over the grill, like lamb skewers with garlic labneh, fritto misto, grilled seabass with beetroot salad, and picanha steak with butter and charred lettuce – all served with fries, fluffy pittas and salads. There’s a cocktail menu of inventive and zingy drinks, while rotating DJs set the vibe at weekends with vinyl nights.

Beach House Falmouth

Cornwall

The fourth site from The Beach House Group overlooks Cornwall’s beautiful Swanpool Beach. Owners Tamara Costin and William Speed have transformed the clifftop location into a destination seafood restaurant and bar, with a Mediterranean-inspired design and menu. Guests can enjoy local seafood like tagliatelle with clams and chilli, whole grilled crab and lobster, baked market fish, and hot shellfish platters featuring cockles, clams, mussels, prawns and scallops, smothered in warm garlic butter. Book ahead for a table this summer, when DJs will bring the party vibes. The restaurant also offers takeaway snacks from its beachside ‘cool box’.
