The SLMan Hot List: March
The Restaurant
Joséphine
There are a number of new restaurants to get excited about this month, not least Jeremy King's Arlington, on the site of his old haunt Le Caprice. But we're also looking forward to Joséphine, a new place in Chelsea that officially opens on 2nd March. Michelin-starred Claude Bosi’s most personal project to date, Joséphine is inspired by his late grandmother and the traditional bouchons he often frequented in his hometown of Lyon. The menu will be filled with nostalgic French bistro classics: think onion soup, oeuf en gelée, salade lyonnaise, leek vinaigrette and traditional mains of rabbit in mustard sauce, veal sweetbread in morel sauce, and bavette in shallot sauce. The wine menu will only feature pours from the Rhone Valley, including some from Joséphine’s own label. In keeping with the classic French feel, this will be available in bouchon-style metre wine, where the bottle is left on the table for guests to help themselves to more, allowing the service to be casual. At the end of the meal, guests will pay only for what they have drunk.
