Vegetarians are covered with roasted cauliflower in a rich vegetable jus with salsa macha. The Butcher’s Tap and Grill Chelsea ‘The Beast Club’

This month, Tom Kerridge’s Butcher’s Tap & Grill Chelsea launches The Beast Club, a celebration of overlooked cuts and the British farms they come from. Each month, a different ‘beast’ takes the spotlight, with a rotating cut featured on the Beast Board. February kicks off with Aberdeen-Cross beef from Suffolk’s Raynham Estate, with five expertly chosen cuts, including chargrilled rump, oxtail ragout and Korean-spiced onglet (£59 for two). March shifts to Blythburgh pork, showcasing the whole animal with dishes like pig head croquettes and pork collar kebabs. April moves to lamb, as The Beast Club continues to champion quality meat, sustainable farming and skilled butchery.
