What’s In My Online Food Order: Toklas' Chris Shaw
CUPBOARD
Mutti Finley Chopped Tomatoes: I hate to jump on the bandwagon, but Mutti tomatoes really are a game-changer. The quality is fantastic, so whether you're making a pasta sauce or slow cooking something with a rich tomato base, you're already off to a great start.
Rummo Orzo: This is one of the best pasta shapes because it's so versatile. A lot of my cooking tends to be quite saucy, and if I find I’ve made something with a bit too much stock or sauce, I’ll often throw in a handful of orzo to give it more substance.
Bold Bean Co Butter Beans: Tuscan bean soup is one of my favourite winter dishes, and these beans have a perfect texture right out of the can. No need to fuss with cooking them – butter beans, sourdough and parmesan make a great combo.
Two Fields Zakros Olive Oil: I’m a big fan of this olive oil. Made from 100% Koroneiki olives and cold pressed, it's light yet high quality, with a fruity flavour and a slight peppery finish.
Chinkiang Black Rice Vinegar: This vinegar has a bold, smoky flavour that’s more intense than your typical rice-based black vinegar. It’s perfect in a dipping sauce or for adding umami depth to a dish.
Tilda Steamed Basmati Rice: The go-to for last-minute egg-fried rice. You never want to use hot rice for egg-fried rice, so having a packet of this on hand is ideal – it’s like having leftover rice in the fridge, ready to season and stir-fry.
Tyrrells Crisps: I’m a big crisp fan, and the flavour I always keep at home is Sweet Chilli & Red Pepper.
Marmite: Marmite on toast is the best sort of snack, especially with lots of butter.
Fridge
Grana Padano: I’m not home for dinner often, so many of my fridge staples have a long shelf life. Grana Padano is a must – it lasts well, and even if it hardens a bit, you can still use it to season stocks and sauces.
Maggi Liquid Seasoning: I use this as a flavour enhancer. It has a rich umami taste, similar to adding soy sauce to a dish.
Minor Figures Oat Milk: This is one of my favourite oat milk brands, perfect for making overnight oats.
Cholula Hot Sauce: Hot sauce can elevate almost anything. There’s very little I wouldn’t pair it with – great on eggs, in bolognese (like you would with Worcestershire sauce) or with fried chicken.
Clarence Court Eggs: Late-night meals for me are often scrambled eggs or egg-fried rice, so having high-quality eggs is key. These organic ones have a beautiful colour when you crack them open.
FRUIT & VEG
Bananas: Always good for an energy boost, you can't go wrong with a good bunch of bananas.
Amalfi lemons: I cook with a lot of citrus in the restaurant, so it feels natural to keep citrus at home too. Amalfi lemons are easy to find and have an incredible flavour, perfect for adding extra zing to dishes or to a gin and tonic.
Spring onions: This is another staple ingredient in my late-night egg-fried rice. I keep it simple, but some finely sliced spring onions on top or stirred through make all the difference.
Romano peppers: I like to make romesco sauce in batches, as it keeps well in the fridge with a good layer of olive oil. I always have romano peppers on hand – you can grill them until the skins scald and peel them for a beautifully textured sauce.
Fresh rosemary: Many of my favourite vegetarian dishes feature rosemary. Recently, I’ve been making a grilled artichoke dish with borlotti beans and rosemary. If it starts to wilt, you can dry it out and blend it into a seasoning.
FREEZER
My Neighbours the Dumplings: For frozen or pre-prepared dumplings, it doesn’t get much better than these. Lamb and coriander is my favourite, but all the flavours are delicious.
Frozen peas: A quick lunch for me is often a simple pea soup. With a stick blender or even a Nutribullet, you can whip one up in no time.
Bread: Since I’m rarely at home, I like to keep bread in the freezer – whether it’s tortilla wraps, pitta or ciabatta. Pre-slicing and freezing it means you can toast it straight from frozen, and nothing goes to waste.
Frozen Berries: When I’m trying to be healthy, I’ll make a frozen berry smoothie.
Twisters: In the summer, I always have a box of these in the freezer. They're very nostalgic – and you can’t argue with how good they are.
DRINKS
Beefeater Gin: I’m not too particular when it comes to gin, so Beefeater works just fine for me. I like a simple, no-frills gin and tonic – something classic.
Fever-Tree: I stick to the basics here too. Regular Indian tonic water cans, nothing aromatic or slimline.
St John Boxed Red Wine: The St John team are masters of simplicity done well. Their 2022 Rouge boxed wine is a staple for me. It lasts a while and has a nice blend of grapes that make it easy to drink.
San Pellegrino Sparkling Water: When I’m hungover, this is my go-to. I don’t usually drink fizzy drinks, but an ice-cold glass of sparkling water always does the trick.
