THE SEAFOOD PLACE
Barry’s Fish Restaurant
‘Barry’ is Scottish slang for good. It also happens to be the name of one of Scotland’s most acclaimed kitchen talents. Barry Bryson has finally put down roots with his first permanent restaurant. Previously known for luxe brand collaborations, pop-ups, festivals and private dining, Bryson has cooked for the likes of Nigel Slater, Roland Mouret and Tracey Emin, as well as creating menus for Edinburgh’s Jupiter Artland. Now he’s arrived in the hip Edinburgh neighbourhood of Leith. Opening just last month, his 34-cover restaurant and bar celebrates the best of Scottish seafood. Menus feature Loch Fyne oysters, Eyemouth crab, sea bass ceviche and evening showstoppers like half-shelled lobster or whole grilled bream.

THE MICHELIN WINNERS
Lyla & Avery
Scotland’s light shone bright in this year’s Michelin Guide, with two new stars awarded and five restaurants earning Bib Gourmands for exceptional food at accessible prices. First to claim a star was Lyla. Based in an elegant Royal Terrace townhouse, Stuart Ralston’s fourth Edinburgh restaurant (after the similarly outstanding Aizle, Noto and Tipo) is a masterclass in refined, seafood-focused dining. Start in the atmospheric first-floor bar before moving to the understated Georgian dining room for a 10-course tasting menu likely to feature wild halibut, langoustines and more – all served with striking precision and in unexpected flavour combinations.
The second Michelin star also went to Edinburgh. Avery is an ambitious newcomer from an American chef. Rodney Wages previously held a star for a place in San Francisco’s Japantown. His meticulous, avant-garde cooking has now brought one to a basement in Stockbridge, where his ever-evolving menu is a playground of inventive flavours and refined techniques. Look for hot-smoked mussels with dried scallops and fermented chilli, or maple-glazed smoked trout in crisp filo pastry with sweet onion purée and caviar.

THE LONDON DELI
Auld Hag
Can’t make it to Scotland? Auld Hag is London’s first Scottish deli. Glaswegian Gregg Boyd has been championing the auld country’s scran for years – starting with haggis deliveries by bike before moving on to pop-ups and residencies around London. Now, at The Shoap, you’ll find freshly baked Glasgow morning rolls, filled pieces for lunch, Scotch pies, shortbread and Dundee cake, as well as Isle of Skye-roasted coffee from Caora Dhubh. The shelves are stocked with top-quality Scottish produce, from Inverness and Mull cheeses to East Neuk smoked fish, Edinburgh charcuterie and craft beers. By evening, The Shoap transforms into a cosy spot for drinks and snacks, serving up slow-cooked Aberdeen Angus mince on toasted plain loaf, Ayrshire langoustines dripping in garlic butter, and crispy pink firs topped with grated Isle of Mull cheddar.

THE ALCOHOL-FREE SPIRIT
Feragaia
Founded in Fife in 2019 by Jamie Wild and Bill Garnock, Feragaia set out to redefine alcohol-free spirits with a bold, unapologetic product featuring 14 botanicals from land and sea. Now, with their own distillery – the first alcohol-free one in Scotland – the pair are relaunching with a refreshed brand and bottle, plus a new line of pre-mixed cans.

THE SWEET DELIVERY
Twelve Triangles
Cult bakery Twelve Triangles is now a decade old, but it has just launched an online shop that makes some of its beloved range available to all. While fresh bread is off the cards, the shop features an array of preserves, condiments and pantry essentials, including its signature smoked ketchup, sweet chilli jam and whey caramel – made from the by-product of its homemade yoghurt and ricotta. Sweet treats include croissant biscotti – crispy slices of croissant dipped in cream, sugar, and salt then caramelised in the oven – and Miche crumb chocolate bars, a collaboration with Scottish chocolatiers Ocelot.

Margo
Margo might be the hottest restaurant in Glasgow right now. Since launching in October, it has built serious buzz – and already earnt a Michelin Bib Gourmand. Sharing plates blend Mediterranean influences with top-notch local produce – standout dishes include red prawn agnolotti and ham hough croquettes. THE CASUAL NEW OPENING
Birds
Scotland’s food scene isn’t just about fine dining – it’s brimming with casual eateries making waves. Next month, Nick Watkins of El Perro Negro will open Birds in the Glasgow neighbourhood of Shawlands. Birds aims to do for chicken what El Perro Negro did for the city’s burger scene. If you need further incentive to go check it out within the Phillies of Shawlands bar, Watkins has just been crowned the UK’s Burger Chef of the Year at the National Burger Awards.
